To make cheese, I need 9 buckets of milk and one bucket of vinegar. To get vinegar I need fruit (and berries count as fruit?) and a barrel with alcohol? To make alcohol I need 10 buckets of water and 160.0 oz of chosen item (in my case I think I can get corn).

And that would give me 160.0 oz of cheese? Is it worth it? I'm not really sure how to live through the winter… 😛

The barrel page is up to date now. There are a few quirks which is why the processes look a bit different from what's listed in the change log, but the information is accurate to what will actually happen when you are playing the game:

Cheese is quite worth it. However, there are several ways to make alcohol, and then vinegar. I prefer to make rum, by using sugar. All you need to do is just fill the barrel with water, put a bunch of sugar in (I don't know exactly, I haven't tested it too much) but you will get a barrel of rum, which can then be made into vinegar. If you keep getting milk all throughout this process, you could have a bunch of barrels of milk, which means tons of cheese. Cheese is nice, go for it.
